HERB-CRUSTED SALMON
INGREDIENTS
4 fresh or frozen skinless salmon fillets, 3/4-inch thick
1/3 cup fresh thyme, minced
1/3 cup fresh cilantro, minced
1/4 cup green onion, minced
1 clove garlic, minced
1 tablespoon fresh lemon juice
1 tablespoon olive oil
1/4 teaspoon salt
1/4 teaspoon pepper
DIRECTIONS
Thaw salmon, if frozen. Rinse fish; pat dry with paper towels. Set aside. Combine thyme, cilantro, green onion and garlic in a shallow bowl wide enough for the salmon filets. Stir in lemon juice, oil, salt, and pepper. Generously coat both sides of salmon with the herb mixture. Cook the salmon on a clean, greased rack of an uncovered grill directly over medium heat for 4 to 6 minutes on each side or until the salmon begins to flake easily with a fork. You can also bake the salmon in the oven. Coat a baking sheet with non-stick baking spray. Preheat oven to 350 degrees and bake for 10 to 15 minutes or until the salmon begins to flake with a fork.
